There are lots of wonderful wild spring greens out there now: young leaves of dandelions, chickweed, trout lily and mustards. Smilax shoots. Violet flowers and leaves, too. A gorgeous addition to a spring salad is redbud flowers. Their flavor is subtle – vaguely like English peas – but in the food presentation category they really pop! Makes a nice tradition – welcoming spring with an annual salad topped with a sprinkling of lovely redbud flowers.
